Super Easy “Fake” Mexican

Grocery list:

1- Quorn brand “chicken” tenders (You don’t even have to tell anyone it’s not chicken! Honestly, they’ll never know!)

2- Shredded Cheddar Cheese
3- 90s brown rice (or Wegman’s 15 min rice in a box.. it’s cheaper)
4- 1 bag Wegman’s brand frozen veggies “santa fe mix”
5- Salsa
6- 1 can diced tomatoes
7- Taco Seasoning (I make this myself, but it’s just as easy to buy a small pack of low sodium seasoning)
Directions:
Dump bag of frozen “chicken” and veggies into pan on low-med heat.
Add can of diced toms.
Add 1/4 C salsa.
Add 1/3 pack of taco seasoning
Stir until heated through.
In the meantime prepare your rice.
Once rice is done, portion rice (3/4C) in a bowl, top with 1 1/2 C “chicken” mixture, 1/8 C Cheese, and as much salsa as you want… YUM!
It took me like 15 min to prepare!
